Weeknight Steak and Veggie Bowl

This is a variation of Courtney’s Kings steak bowl. I used her recipe but added in avocado and omitted the stevia. I thought it was sweet enough with the coconut aminos. I hope you enjoy! Be kind this is my first “cooking video.”

Variation of Courtney King's steak bowl.

1/4 pound of strip or flank steak strips (ask butcher to cut for you)
1/2 cup kale chopped
1 zucchini chopped
1/4 cup cooked Jasmine Rice: link below to exact rice

coconut aminos (trader joe's or similar below)

salt and pepper
dijon mustard
Cholula Sauce Hot Chipotle

1/2 of an avocado
pico de gallo

Instructions:
Cook steak in hot pan with coconut aminos and salt and pepper.
Once cooked set aside.
In same pan cook kale and zucchini with aminos and salt and pepper until kale is wilted.
Cook or microwave rice.
Assemble salad and mix with 1 tablespoon of dijon, hot sauce and more aminos. MIX
Add avocado and pico!
