Super Bowl Dips and Appetizers

My favorite part of Super Bowl weekend isn't the actual game (I know, I know you can shudder or applaud me) but getting together with friends and eating yummy food.
I’d like to share two favorite dips with you all. These are super easy and best of all no bake! Both are served with my favorite combo, pretzels, carrots, and some toasts. Enjoy!

Pimento-Cheese

Pimento Cheese Dip (recipe by Paula Deen here)

Ingredients

  • 1 (3-ounce) package light cream cheese, room temperature
  • 1 cup grated sharp cheddar
  • 1 cup grated Monterey Jack
  • 1/2 cup light mayonnaise
  • 1/2 teaspoon House Seasoning, recipe follows
  • 2 to 3 tablespoons pimentos, smashed
  • 1 teaspoon grated onion
  • Cracked black pepper

Directions

Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended.

 

House Seasoning:

  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder
Mix ingredients together and store in an airtight container. I find it’s better if you let it sit in the refrigerator the night before to meld all the flavors.

“The Dip”
This was a favorite among my girlfriends in high school. My friend, Stefanie always had it at her house for parties. It is known as “The Dip.”  She has graciously let me share it with you all on my blog!

Ingredients

  • shredded swiss cheese—buy the bricks and shred yourself!
  • light sour cream
  • light mayonnaise
  • house seasoning from above recipe
  • parsley flakes

    Directions

    Mix all ingredients and season according to taste. Sorry, I don’t have any measurements for this one. That is still a secret, but you put more mayo in than the sour cream. Add each gradually, stir it up as you are putting it in, and adjust it to your tastes!

    No time to make dip? This is one of my favorites!
    mini meatballs
    One of my favorites are grape jelly meatballs in the crockpot. Sounds gross but everyone loves these! All you need in addition to precooked meatballs is one bottle of chili sauce and a jar of grape jelly. Throw it into the crock pot on the low setting and cook it for at least a couple hours if not more or even all day! Serve with toothpicks.
